Quick and Easy Stuffing-Stuffed Chicken with Mushroom Sauce

This quick and easy stuffing-stuffed chicken with mushroom sauce is a yummy recipe that is so easy to make.  It’s a good one for those days when time just isn’t on your side.  Do you have a lot of those days?  I know I do.  I got this stuffing-stuffed chicken recipe years ago from a friend, but the sauce is my own.  It’s wonderful comfort food on a cold day, too!  It’s just so good!

 

Quick and Easy Stuffing-Stuffed Chicken with Mushroom Sauce

Ingredients

1 box Stove Top stuffing, prepared
5 boneless, skinless chicken breasts
Sauce (see sauce ingredients below)
 

Sauce Ingredients

1 can cream of mushroom soup
1 can sliced mushrooms OR 3/4 cup fresh, thinly-sliced mushrooms
1/2 c sour cream
1 c milk
salt and pepper to taste
 

What To Do

  • Pound the chicken breasts flat.

  • Next, cover 1/2 of each chicken breast with stuffing.  Fold the chicken over and use a toothpick to hold it in place.  (My daughter suggested putting a little slice of swiss cheese inside the breast with the stuffing next time—brilliant!)

  • Once you have stuffed all of the chicken breasts, place them in a 9 x 13 baking pan prepared with cooking spray.

  • Next, to make the sauce, mix cream of mushroom soup, mushrooms, sour cream, and milk in a bowl. Add salt and pepper to taste.

  • Pour the sauce over the stuffing-stuffed chicken breasts.

  • Bake at 350 degrees for half an hour or until bubbly and the chicken is cooked all the way through.

 *Note:  If you are looking for a side dish for the quick and easy stuffing-stuffed chicken with mushroom sauce, my Parmesan Asparagus is perfect!   We had it for dinner last night.  I definitely recommend you give it a try!
