Easy Salsa Chicken

I work as a nurse on top of mommy, household duties, and blogging, so I LOVE miracle recipes like easy salsa chicken where the leftovers can turn into other meals.  Less work for me and often more economical, too!  Who doesn’t want to keep their money?  I love this recipe because I can usually make it into 3 different meals.  If you don’t want to have chicken 3 days in a row, no worries.  Just break your leftovers down into 2 containers, throw it in the freezer, and it is ready when you are.  Oh, and did I mention you can use your slow cooker.  This recipe is virtually NO WORK.  Sign me up, right?

So several years ago at one of the potlucks we had at the ob/gyn office where I work, one of the nurses I worked with (I miss you, Steph!) and her daughter brought in this shredded chicken dish in a crockpot (we were having chicken soft tacos that day, I think).    I tweaked the recipe a bit and it is one of my go-to recipes when I want something that takes very little time but has big paybacks in taste.

 

 

 

 

Easy Salsa Chicken

Ingredients:

5-6 boneless, skinless chicken breasts

2 cups of your favorite salsa  (I make my own salsa)

1 generous handful of shredded cheese (I usually used mozzarella or cheddar, but whatever’s in the fridge works!)

1 Tbsp. diced green chilis

2 Tbsp. chopped cilantro

Optional:

1 can black beans, drained

1 can whole kernel corn, drained

 

 

 

 

What To Do:

 

Throw all of the above ingredients in your slow cooker.  If you don’t have one or need a new one, I love this one:

Slow cook for 4-5 hours until chicken is very tender.  The next step depends what you plan to do with your chicken.  You can serve it whole with rice or black beans on the side.  Most of the time I do not do that, though…I like to make the chicken stretch for a few meals.  So here’s what I usually do:  Stick the kitchen scissors (my knife block has one…does yours?) into the crock pot and cut it up into bits.

 

 

Slow cook the salsa chicken another hour or so.  When you are finished, it should look something like this:

At this point you can use the Easy Salsa Chicken for lots of things.  A few of my favorite recipes that use the salsa chicken are listed below…

Other ideas:

Chicken soft tacos – (warm your tortillas, add shredded chicken, then top with whatever taco toppings you like:  cheese, lettuce, fresh tomato, avocado, black olives, salsa, sour cream, etc.

Chicken and Cheese Quesadillas – I’ll post that one soon, too!

 

Fajitas – Just sauté some sliced green peppers and onions.  Throw it on a warmed tortilla with the salsa chicken.  When you heat the chicken for these, you can add a little fajita seasoning…season to taste.
