I love this yummy chicken black bean soup recipe. In fact, I would go so far as to say that it is my favorite. It is hearty, reasonably healthy, and so yummy. I also love it because it is easy to make. Whenever I make salsa chicken (find that recipe here), some of the leftovers always find their way into my soup pot! Haven’t made my salsa chicken recipe yet? No worries…you can just substitute a cup of salsa and a cup of cooked, shredded chicken! You are gonna LOVE this, my friend!
Yummy Chicken and Black Bean Soup

Chicken Black Bean Soup Ingredients
4 cups water
1 10 oz. can red enchilada sauce
1 cup salsa chicken—OR 1 cup salsa and 1 cup shredded cooked chicken
2 (15 oz.) cans black beans, drained
1 (15 oz.) can red beans, drained
1 (15.25 oz.) can corn, drained
2-3 large diced garden tomatoes OR 1 can diced tomatoes
1/8 cup dried minced onions
1 (14.5 oz.) can chicken broth
1 generous handful of shredded cheese (I usually do either mozzarella or cheddar)
2 tsp. salt
1/2 tsp. garlic salt
1 tsp. ground black pepper
1/2 tsp. dried oregano
2 tsp. ground cumin
1 1/2 Tbsp. chili powder
Sour cream and fresh cilantro for garnish
How to Make Chicken Black Bean Soup
Start with your salsa chicken-measure out one cup of it and throw it in a large pot (OR if you don’t want to make salsa chicken, use 1 cup cooked, shredded chicken and 1 cup salsa).
In your kitchen strainer, strain the corn, red beans, and black beans.
Once they have drained well, dump them in the pot with the chicken. Also dump in one can of diced tomatoes (I don’t bother to drain the tomatoes) and the remainder of the ingredients.
