Pizza Stuffed Chicken Breast

I want to share one of my chicken breast recipes with you.   This pizza stuffed chicken breast recipe is a new creation of mine. Whenever I make something new, I always ask my husband is this blog-worthy?  He said that this one definitely is, and I think so, too!
 
This recipe came to be because I’ve been getting a little bored lately with having the same-old same-old for dinner all of the time. I wanted to try something a little different.  This is what I came up with…you will love this twist on homemade pizza!

Pizza Stuffed Chicken Breast Recipe Ingredients

  • chicken breasts
  • pepperoni
  • shredded mozzarella cheese
  • black olives, sliced
  • garlic salt
  • pizza sauce (you can use canned spaghetti sauce and add a little pizza seasoning to it if you like)
  • pizza seasoning (optional)
 

How to Make Pizza Stuffed Chicken Breasts

First, you need to prepare the chicken breast.
 
You can do that one of two ways. You can either pound the chicken breast flat and then put your toppings on half of it and fold it over  (hold it closed with a toothpick) OR you can do what I’ve done in these pictures: I sliced the chicken breasts in half horizontally (I cut almost all the way through, but not all the way through. That way the ingredients stay inside the breast).
 
Once you have prepared your chicken breast, place them in a baking pan that has been sprayed with cooking spray.
 
First, place a layer of pepperoni slices inside of the chicken breast.  I overlapped them because I like a lot of pepperoni.
 
Next, add in your sliced black olives and shredded cheese.
 
Fold over and “close” the chicken breast.
 
Depending on what you are using for pizza sauce, you use you may or may not want to sprinkle over it with a pinch or two of pizza seasoning.
 
Once you have stuffed the chicken breast then you drizzle some marinara over the top and then add more mozzarella cheese. I also took a pinch of garlic salt and sprinkled it over the top of the breasts, just to give a little extra flavor. (I love garlic salt!)

Cover the pan loosely with aluminum foil. It’s important that you do it loosely, otherwise, the cheese will melt and stick to the foil and it won’t look very nice 🙂
 
Bake at 350 degrees until the chicken breast is cooked all of the ways through, about  20 to 30 minutes.  For the last 10 minutes of cooking time, remove the foil so that the cheese will be completely melted.
