Pepper Jack and Bacon Egg Bites Recipe

My family loves these savory egg bites. Talk about a protein-packed meal! We eat them for breakfast, lunch, or dinner! The great thing about egg bites is you can personalize them for the picky eaters in your family, but still pack them full of flavor for the rest of your crew!
Pepper Jack Cheese and Bacon Egg Bites Ingredients
6 large eggs
4 strips of crispy bacon (crumbled)
1/4 cup of milk
3-4 ounces of pepper jack cheese (cut in small cubes)
1/2 c shredded cheddar cheese
Garlic salt and pepper to taste
Pepper Jack and Bacon Egg Bites Directions
Cook the bacon until crispy.
While the bacon is cooking, cube the pepper jack cheese.
Once the bacon is crispy, remove it from the oven and let it cool a bit, then crumble it.
In a medium-sized mixing bowl, combine the eggs, milk, garlic salt, and pepper.
Spray the silicone mini muffin tins with cooking spray.
I strongly recommend that you use a silicone mini muffin tins to make these egg bites. It is much easier to remove the egg bites intact from a silicone tin than a metal tin.
In each mini muffin slot, place 2 or 3 little cubes of pepper jack cheese and a generous pinch of crumbled bacon.
Top off the mini muffin slots with the egg mixture and then top each egg bite with a pinch of shredded cheddar cheese.
Bake at 350 degrees until completely cooked (approximately 15-20 minutes).
After removing the egg bites from the oven, grab one small pinch of garlic salt and lightly dust the top of the egg bites.
Let the pepper jack cheese and bacon egg bites stand for 3 minutes before gently flipping the muffin tray.
Press on the bottom of each mini muffin slot to push the egg bites out of the silicone mini muffin tray.
