Seasoned Zucchini Bites

This seasoned zucchini bites recipe is DEFINITELY one of my favorites!  I made it for a church gathering once and people devoured it!

I have been trying to work on eating a little healthier…which is hard when you love food like I do…but I have been trying to get more “real food” and less processed and junk food in our diet.  That is not to say that I don’t eat junk food…believe me, I do!

Anyway, we have an abundance of zucchini from our garden right now.  I have seen people do some really creative things with zucchini on Pinterest, which inspired me to experiment to figure out a recipe that is both delicious and reasonably healthy.

Now when I say it is healthy, that is a relative term.  If you compare it to celery, it’s not-so-much-healthy…but imagine these in place of cheese bread sticks with a pizza.  It’s sounding pretty healthy now, isn’t it? 😉  And the best part is it’s so easy, just throw it together on a baking sheet, cook, and serve!

How to Make Seasoned Zucchini Bites

Seasoned Zucchini Bites Ingredients

  • 2 medium-sized zucchini
  • 2 c shredded mozzarella or cheddar cheese
  • 1 c grated parmesan cheese (the real stuff…not that stuff you sprinkle on spaghetti!)
  • 1/2 Tbsp organic dried thyme
  • 1/2 Tbsp organic dried oregano
  • 1/4 tsp organic Himalayan pink salt
  • 3/8 tsp organic fresh ground pepper
  • Organic garlic salt to taste (I wait and use a few pinches of it to sprinkle on after the zucchini bites are fully cooked)

Seasoned Zucchini Bites Directions

Preheat the oven to 350 degrees.

Cut the zucchini crosswise into 1/4-1/2 inch thick circles.

Lay the zucchini circles out so that they are almost touching on a cookie sheet that has been sprayed with organic cooking spray.  Set aside.

In a medium-sized bowl combine the fresh parmesan cheese, thyme, oregano, salt, and black pepper, then stir.

Sprinkle approximately one teaspoon of the parmesan mixture onto each zucchini circle.

Next, top with just enough mozzarella (or cheddar) cheese to mostly cover the zucchini.

Bake at 350 degrees for 10 to 20 minutes, until the mozzarella is starting to get crispy and golden brown (oven cooking times may vary, so watch it closely after 10 minutes of baking).

Remove zucchini bites from the oven.

Sprinkle them lightly with garlic salt and serve!

Ingredients

These sound sooo good! I do something similar on top of the stove. I melt a small amount of butter in a pan - just enough to lightly coat the bottom and add a little flavor. I cook zucchini slices and fresh tomato slices over low-med. heat until tender - adding a bit of salt and pepper as I go. When tender, I sprinkle on both shredded mozzarella and sharp cheddar cheese. Cover until melted. Oh, I'm craving it now!
