Bacon and Cheddar Stuffed Chicken Breast with Avocado Sauce

I love to experiment with recipes and this week I did a little experimenting and made Bacon and Cheddar Stuffed Chicken Breast with Avocado Sauce and oh, it was yummy!  It was pretty fast to throw together and the hubs gave It two thumbs up 🙂  Chicken has been getting kind of boring to me lately, so I’ve been looking at different things to do with it.

Bacon and Cheddar Stuffed Chicken Breast Ingredients

3 boneless, skinless chicken breasts

6 slices of bacon

Shredded cheddar cheese

Avocado Sauce Ingredients

1 large avocado

1/2 cup sour cream

1/3 tsp lemon juice

1/3 cup milk

1/8 tsp garlic salt

Black pepper to taste

How to Make Bacon and Cheddar Stuffed Chicken Breasts

The first thing you need to do is to cook your bacon until it’s crispy.
 
 
Set a chicken breast on a cutting board and pound it out flat.  Cover half of the flattened chicken breast with shredded cheddar cheese and pieces of crispy bacon.

Sprinkle them lightly with black pepper, then fold over the chicken breast and secure it with two toothpicks.

After you have done that to all of the chicken breasts, place them in a 9 x 13 baking pan that has been sprayed with cooking spray.  Cover them with foil. Place them in the refrigerator while you make the avocado sauce.
 
 
In a mixing bowl, mash the avocado well. Add the sour cream and other ingredients.  Blend well.

Remove the chicken breasts from the refrigerator and uncover them.  Drizzle the avocado sauce over each breast.  Sprinkle cheddar cheese on top.

Cover the chicken breasts loosely with aluminum foil and bake it at 350 degrees until the chicken is cooked through, usually 20 to 30 minutes.  Makes 3 servings.

Serve it with a side of veggies and you have a great meal!  Enjoy!

This goes great with some fresh steamed veggies on the side!
