How to Make Easy Southwest Salad

You can make easy southwest salad to have a quick and easy meal.  This recipe has a delicious combination of veggies, black beans, ranch dressing,  and salsa.  (I’m down with eating just about anything that has black beans and salsa!)  It just bursts with southwest flavor!  One of the best things about this salad is it’s a no-cook recipe.   You get your protein without cooking meat!  How awesome is that?  Are you busy preserving the produce from your garden?  No problem!  At times like that when life is so busy, recipes like this one can be thrown together in a jiffy so you can get other things done!

Southwest Salad Ingredients

  • Bag of Lettuce (or Romaine, chopped)
  • Can of Black Beans (drain and rinse)
  • Can of Corn (drained)
  • Shredded Cheddar Cheese
  • Tortilla Chips (crushed up)
  • Salsa
  • Ranch Dressing

How to Make Easy Southwest Salad

You can either serve this yummy southwest salad in a big bowl or else just set everything out individually and let everyone make their own salad.

Layer the ingredients in the bowl:  chopped lettuce, then drained corn and drained beans, then shredded cheese.  Repeat layers until the bowl is full.

Top the salad by sprinkling it with crushed up tortilla chips.

Finally, drizzle your ranch dressing and salsa on it, then it’s time to eat!  See how FAST that was?

How to Make Easy Southwest Salad

Yield: 6 servings
Prep Time: 10 minutes
Total Time: 10 minutes

This delicious southwest salad can be thrown together in a jiffy! Just layer all of the ingredients in a bowl and serve!

Ingredients

  • Bag of Lettuce (or Romaine, chopped)
  • Can of Black Beans (drain and rinse)
  • Can of Corn (drained)
  • Shredded Cheddar Cheese
  • Tortilla Chips (crushed)
  • Salsa
  • Ranch Dressing
  • Avocado slices for garnish (optional)

Instructions

  1. You can either serve it in a big bowl or else just set everything out individually and let everyone make their own salad.
  2. Layer the ingredients in the bowl: lettuce, then drained corn and drained beans, then shredded cheese. Repeat until the bowl is full.
  3. Top with crushed tortilla chips.
  4. Finally, put on your ranch dressing and salsa, then eat!

Notes

Garnish with avocado slices, if desired.

I really think that you are going to love this easy southwest salad!  It is low-fat and low-carb, yet filling.  Not to mention delicious and super easy!  My sister-in-law, Jenny, says even her kids love it.
