Christmas Chocolate Peanut Butter Candy

Hello, my friends!  I’m excited to share with you the recipe for my Christmas Chocolate Peanut Butter Candy.  At Christmas I like to make up a plate of treats for the family and this is a favorite. 

I use this as a Christmas recipe, but you can make this is as just regular peanut butter cups, heart shaped for Valentines Day, or egg shaped for Easter (note: if you make Easter eggs, shape them into an egg, chill, THEN dip in chocolate and place on waxed paper to dry).

That said, I usually make them at Christmas. To make them, I like to use these jello Christmas molds.

I’ve had these molds for probably 15 or 20 years.  I can’t remember where I got them, but I love them. I couldn’t find them on Amazon to give you a link, but I did find a couple of others that were super cute! Here are the links so you can give this a try!

 

Christmas Chocolate Peanut Butter Candy Ingredients

one stick of butter, softened
one pound of powdered sugar (which is about 2 cups)
2 cups of peanut butter
1 teaspoon of vanilla
2 bags of milk chocolate Nestle toll house chocolate chips (you will melt this separately)

Christmas Chocolate Peanut Butter Candy Instructions

Put all of the ingredients EXCEPT for the chocolate chips into a large bowl and mix with a hand mixer until smooth. Set aside.

Melt your chocolate chips in a double boiler or slow cooker on low heat (double boiler is faster).  Don’t have a double boiler?  No problem!  Just fill a pan half-way with water,  then put a larger metal bowl on top.  Stir occasionally.   As the water boils,  it will  heat the bowl and melt the chocolate!

Once  the chocolate chips have melted and are smooth, use a pastry brush and brush chocolate into your mold. Put the mold into the freezer to harden,  then repeat.

Once you have painted a double layer into the mold and frozen it, press in the peanut butter mixture.  Scrape off the excess mixture.

Press the peanut butter mixture flat,  then paint on a layer of chocolate.   Refreeze.

Once the chocolate is hardened completely,  pop the candy out of the mold.

Trim off the excess chocolate around the edges.  A potato peeler works well to smooth the edges.  When you are done you have cute Christmas Chocolate Peanut Butter Candy!

You can put them in a freezer bag,  press out the excess air, and save them til Christmas!  Don’t you love it when you can do things ahead of time to keep the holiday itself nice and relaxed?  I do!

#1 - I can't believe how easy this is, #2 - I can't believe 1 lb. of powdered sugar is only 2 cups, #3 - these would not last long in our house AT ALL! Pinning :D

Oh, yeah. Very easy. This year I am using the same recipe and making peanut butter balls. Yummers.
